Easy Jalapeño Cheesy Squares, Slathering Sauce Meatballs, Slap-Happy Margaritas and the Beach!

Sometimes I just want it easy. Well, let's face it, most of the time I want it easy. In my What's InSTORE Fridays segment this week, I show you 2 easy appetizers that are so good. 

The first is the meatballs with Slathering sauce. I must have made a thousand meatballs in my life, but when I want quick and easy, I buy a small bag of meatballs, heat them up on the stove and pour a bottle of Slathering Sauce over them. So good! So easy! The Slathering Sauce is produced in Charleston, SC and I sell the Original and the Bold and Spicy.

The other easy appetizer I made this week, is the Cheesy Jalapeño Squares. Get this - only 3 ingredients: jalapeños, sharp cheddar and eggs! (See the recipe below.) You cut them up like brownies and they go great with Slap-Happy Margaritas. (Also below.)

When we go to the beach for vacation, we usually go out for dinner, but sometimes we'll just stay in and have appetizers and cocktails while sitting on the deck watching the waves. It is usually a few of us, so I will mix up a batch of Slap-Happys. The ingredients sound odd, but trust me it makes a wonderful cocktail and easily doubles. The goal is to make happy memories at the beach and folks will remember your hospitality and your appetizers.

 

Cheesy Jalapeño Squares

Preheat oven to 350 degrees

 1 - 4 oz. jar jalapenos

1 lb. sharp cheddar

6 eggs

Chop the jalapeños and spread on the bottom of a 2 qt. baking dish.

Sprinkle the cheese evenly over the jalapeños.

Mix the eggs well and pour over the cheese.  Bake at 350 for one hour or until brown and bubbly. Let sit a few minutes and cut into squares and serve while hot.

Slap Happy Margaritas

1 6 oz. limeade

1 can tequila (using the limeade can)

1  12 oz. can 7Up

1 12 oz. can Corona and beerlimes for garnish (optional)

Pour all 4 ingredients into a pitcher. Stir well, pour into glasses with lots of ice, and garnish with a slice of lime.
